Fig Jam & Spam Breakfast Pie

  • 2 prepared pie crusts (store bought or see recipe link below)
  • 16 slices of bacon
  • 2 Tablespoons brown sugar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon crushed cumin
  • 2 pinches finely ground black pepper
  • 2 Vidalia onions - sliced thinly
  • 1 small bunch of fresh thyme - stems removed
  • 3/4 cup fig jam
  • 8 ounces Spam (3/4 of a regular sized can)
  • 5 large eggs
  • 1 cup whole milk
  • 1 cup heavy cream
  • 1/3 cup cream of chicken soup concentrate
  • 1/4 teaspoon freshly ground pepper
  • 1 grating of nutmeg
  • 1/4 teaspoon of cayenne pepper
  • 1 teaspoon dry mustard
  • 1 cup of aged Gruyere cheese
  • 1 and 1/2 cups quality Cheddar cheese
  • 2 Tablespoons canned diced jalapeno
This recipe makes enough for 10 servings; one rectangular tart pan, or two traditional 10" pies.

For the pie crusts, we recommend our recipe for Flaky Herb Crust For Quiche. Par bake the crusts for 15 minutes to keep the bottom of your quiche from being soggy.

To make the Bacon Crumble Topping:

Mix together the brown sugar, paprika, cumin and pepper.

Preheat oven to 425 degrees. Spread bacon out - not overlapping - over 2 rimmed baking sheets. Bake for 10 minutes. Carefully drain off grease. Sprinkle each slice of bacon with the brown sugar mixture. Continue baking until the bacon is browned and crisp (about 15 more minutes). Once cooled, finely chop or crumble the bacon. Set aside.

For The Caramelized Onions:

Heat a heavy bottomed skillet on medium heat. Melt 3 Tablespoons butter. Saute the onions with the thyme and salt until nearly caramelized or for about 20 minutes. Stir in the fig jam. Cook 5 more minutes - stirring occasionally.

For The Filling:

Cut the Spam into small cubes. Fry with cooking spray over medium-high heat until most pieces are nicely browned. Set aside.

In a mixing bowl, whisk the eggs with the milk, cream and soup concentrate. Then, add the spices, the cheese, the jalapeno and the Spam cubes. Mix well.

To Construct The Pie:

Spread the caramelized onions on the bottom of the par-baked pastry crust, then pour the egg mixture on top. (Smooth out the mixture with a spoon to distribute the grated cheese evenly if necessary.)

Baking:

Bake at 350 for 30 minutes until the quiche is mostly set. Sprinkle the crumbled bacon mixture evenly over each pie. Bake an additional 20 to 25 minutes until the the egg is complexly set. Test for doneness with a toothpick inserted in the center. If it comes out clean, the pies are done.

If the edges of the crust or the bacon topping begin to over-brown, top the pies loosely with aluminum foil to prevent further browning.

I make a quiche with just Spam, Cheddar cheese, green pepper and onions and I love it. Yours sounds very interesting, but it has so many ingredients. I'll save this one for later.
