Sautéed Roast Beef Hash

  • 1 cup leftover cubed roast beef
  • 1 cup cubed boiled potatoes
  • 1/2 cup chopped green onion
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
In a large bowl, mix together all ingredients. Heat 2 Tablespoons of cooking oil in an 8-inch skillet. Add all hash ingredients and cook over medium heat for about 5 minutes. Then, turn over and cook another 5 minutes. Turn once more and cook 5 minutes, making sure not to overcook it.

Note: You could also use leftover baked potato but the resulting hash will have more of a flat consistency.
