Make-Ahead Peppermint Mocha Frappe

- 1 cup very strong dark roast coffee - hot
- 1/4 cup chocolate syrup
- 3 drops peppermint extract
- 1 cup milk
- 1 Tablespoon sugar - optional
- additional milk - for blending
- whipped cream - optional
- crushed candy cane - for garnish
How To Make A Peppermint Mocha Frappe
In a large measuring cup with a pour spout, stir the chocolate syrup and peppermint into the hot coffee. Add the milk and stir to combine. Taste for sweetness. Add optional sugar if desired.
Pour mixture into 2 ice cube trays. Freeze at least 4 hours.
When ready to serve, simply place the ice cubes in a blender and pulse until cubes are pulverized. Add milk to as you blend to get the consistency you want. I used 3/4 cup additional milk for mine.
If desired, top with whipped cream and garnish with crushed candy canes or peppermint candies.
Recipe Notes:
If you don't have peppermint extract, you could use 1 mini candy cane, 1/4 of a standard candy cane or 2 round peppermint candies. Just freeze everything as directed and then add the candy to the blender with the ice cubes. You'll get occasional crunchy specks in the drink, but there's some people who actually prefer that.
Special Equipment: For this recipe, I used the Ninja Coffee Bar to make espresso-strength coffee and the Nutri Ninja to blend everything together.
Save some money this Christmas. Corporate coffee shops charge nearly $5.00 for a drink you can make at home for less than a dollar. That's $4.00 extra dollars you could spend on your friends, family or liquor.

I make it kind of like this but instead of peppermint extract, I crush up and add a mini candy cane.
