Hard Tack

  • 2 cups buttermilk
  • 2 cups rye flour
  • 1/2 cup sugar
  • 1 cup fat
  • 1 teaspoon soda
  • 1/2 teaspoon salt
  • white Flour
Sift rye flour, soda &and salt. Add fat & buttermilk. Mix hard with white flour.

Roll thin and bake at 350 degrees for 30 to 40 minutes. Then let dry on top of oven until crisp.

Note: Lowering the oven temperature and cooking longer will create a dryer, crisper result. Some recipes recommend an hour at 300.

To make Hard Tack into a breakfast dish: Beat together 3 large eggs and 1/2 cup milk. Add about 1 and 1/2 cups crumbled hard tack crackers. Stir to coat. Let set until hard tack becomes softened. Cook over medium heat in a greased frying pan as you would cook scrambled eggs. Serve with jam or maple syrup. (See similar recipe: Matzah Brie aka Fried Matzah)


A simple cracker that dates back to the era of King Richard I. The reason it's here is because it can be used like Matzah to create a unique breakfast dish.

I'm sure when our brave, bold soldiers and sailors were building the British Empire hard tack was made quicker and easier than this.
