Scrambled Eggs with Lox and Cream Cheese

- 12 large eggs
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 3 Tablespoons butter
- 1 8-ounce package cold cream cheese - cut into 1/2-inch cubes
- 6 ounces thinly sliced Nova Scotia smoked salmon or lox - cut into 1/2-inch pieces
- fresh chives - chopped
Melt butter in large nonstick skillet over medium-high heat.
Add eggs. Using wooden spoon, stir until eggs are almost set, about 5 minutes.
Gently fold in cream cheese and salmon and stir just until eggs are set, about 1 minute.
Transfer eggs to platter. Sprinkle with chives, if desired, and serve
Temporarily turn you kitchen into a Jewish delicatessen and enjoy this classic breakfast. Try to get the best quality smoked salmon available.

I as well had this at a diner called Thumbs UP, and taking on a new adventure in the kitchen is right up my alley, it was so good, and it isn't just like the Sassy Scramble but pretty close. Scrumptious.

I would add onions to this recipe to have the traditional borscht belt home run.... finely chop a vidalia or spansig onion (sweet or hot alternatives) and add to melted butter, caramelize in skillet, then add the eggs and continue the recipe as above. It adds a terrific flavor that I've been making for decades. For the cholesterol conscious, you can use a well chilled .5% cottage cheese and egg whites and it is a terrific alternative. It's also great without the cheese...

I've had this in a diner called Thumbs Up in Atlanta Georgia. It is called the Sassy Scramble and it is delicious. It is one of their best sellers. The portion is huge and with 2 slices of toast and coffee, it's all you need. So good!

My son had one like this at a nice place called Milton's in Lawrence, KS. However it also has a dill or some sauce with it too. Anyone know?

I added the cream cheese in a little too early and it melted all together making it a little hard to tell when the eggs were done. I think maybe the cream cheese is supposed to stay in clumps, but the results was still very tastey.
