Loaded Breakfast Burritos

- 1 Tablespoon olive oil or butter
- 1 cup red or green bell pepper - chopped
- 1 cup green onions - chopped
- 3 cloves garlic - finely chopped
- 1 cup zucchini - diced
- 1/2 cup canned or thawed frozen corn
- 6 to 8 large eggs - beaten
- 1/4 cup cilantro - chopped
- 1 teaspoon dried oregano
- salt and freshly ground pepper - to taste
- cayenne pepper - to taste
- 6 to 8 flour tortillas
- 1 cup grated mozzarella or shredded Cheddar cheese
minutes.
Add the zucchini and corn and cook covered for 5 minutes.
Add the eggs, cilantro, oregano, salt, pepper, and optional cayenne
and cook until eggs are set, stirring occasionally.
Spoon the mixture onto the tortillas and top with the grated cheese.
Fold over one side of the tortilla about 2 inches (5 cm) and roll up, making the folded side the bottom of the tube.
Serves 6 to 8.
Deluxe breakfast burritos with zucchini and corn for more of a gourmet flavor. You could also add cooked and crumbled bacon or sausage.

Put in the time and effort, it is worth it. If you don't like corn, leave it out, but don't low rate the recipe because you don't like one ingredient.

I agree with Mazzy. This burrito looks great, but it's too much effort. I prefer a breakfast burrito with just bacon, eggs, cheese and salsa. Maybe some hash browns too.

That's too complicated. Here's my recipe: crumble and cook a sausage patty; add two eggs and stir until eggs are done; place in tortilla; grate cheese on top; spoon on some salsa; roll burrito and eat. Fast and delicious.

You should have pictures about how to roll a burrito. I always mess up and put too much inside the tortilla. Always delicious but not so pretty.

Didn't make exactly as directed - no corn - however, it was really interesting using zucchini and mozzarella cheese in a breakfast burrito - liked it - will try it again.
