Italian Pete's Italian Honey Granola

- 2 cups rolled oats
- 1/4 cup light brown sugar
- 1/4 teaspoon ground cinnamon
- 1/2 cup golden raisins
- 1/3 cup slivered almonds
- 4 Tablespoons (1/2 stick) unsalted butter
- 4 Tablespoons honey
Preheat an oven to 325 degrees F.
In a bowl, combine your oats, sugar, cinnamon, raisins and almonds, and toss to mix. In a saucepan over low heat, melt the butter, add the honey and stir to blend. Pour over the oat mixture and stir to blend.
Spread the granola out on a baking sheet and bake until golden and crunchy, 25 to 30 minutes. Cool to room temperature before serving.
This granola is delicious for breakfast. Serve with yogurt and the season's best fruits. Stored in an airtight container, the granola will keep up to 10 days.

I make this ALL the time. I bake the granola until gently browned, stirring often. I add Craisens (or raisins) after baking, stir them in a allow to cool. I have used olive oil instead of butter and for lower sugar, leave out the brown sugar.

Roasted/toasted almonds produce a chemical that has been linked with cancer. I'd put in chopped, raw almonds and dried fruit AFTER you bake it.

Didn't come out well cooked but burned! Rasins were totally burned, but the oats and almonds tasted good . -Monalisa
