Coconut Waffles

  • 3 cups flour
  • 4 tablespoons baking powder
  • 1 cup shredded coconut
  • 2 teaspoons sugar
  • 2 eggs beaten
  • 2 cups milk
  • 4 teaspoons shortening melted
  • 1/2 teaspoon salt

Mix together flour, shredded coconut, salt, sugar and baking powder. Add milk, beaten eggs and melted shortening. Beat well. Cook in hot well greased waffle iron to a golden brown.

If you find the batter is too thick... add more liquid... use your intelligence... it works.

This recipe was terrible. You could knaw on one of these bricks(waffles) for weeks. The waffles were about 2 to 3 times heavier than normal waffles.

I wanted to bring this to your attention: I tried making the coconut waffles...they were horrible. I am wondering if the liquid measures are correct for the shortening, as the waffles were so thick and breadlike that they would have required soaking in milk to get down. I could have kneaded that batter! I ended up throwing the entire batch away and eating cereal instead.
