Refrigerated Raisin Bran Muffins

- 2 and 1/2 cups whole wheat flour
- 2 Tablespoons baking soda
- 3/4 teaspoon salt
- 3 cups All Bran cereal
- 1 cup boiling water
- 2 large eggs - beaten
- 2 cups buttermilk
- 1 and 1/2 cups sugar
- 1/2 cup vegetable or canola oil
- 1 and 1/2 cups raisins
Pour boiling water over cereal. Set aside. In a large mixing bowl combine eggs, buttermilk, sugar, cooking oil and remaining bran cereal. Add flour mixture to egg mixture.
Stir until moist. Add soaked bran, stirring to combine. Fold in raisins. Transfer batter to a covered container. Refrigerate overnight, or up to three days.
TO BAKE: Spray muffin tins, with nonstick cooking spray. Spoon batter into tins, filling to 2/3 full capacity.
Bake in a 400 degree oven for 15-20 minutes, or until tops spring bake, when lightly touched.
Bran muffins are both tasty and an excellent, healthy source of fiber.
