Super Breakfast Pizza

- 1 12-inch pizza crust - pre-baked
- 1 and 1/2 ounces pizza sauce
- 3 large eggs
- 1 ounce cooking oil
- 2 or 3 teaspoons red and green bell peppers - small diced
- 1 T. sauteed leeks
- 1 teaspoon sun-dried tomatoes
- 1 Tablespoon fresh diced tomatoes
- 2 ounces Monterey Jack cheese - shredded
- 2 ounces Cheddar cheese - shredded
- 1/2 ounce fresh Parmesan cheese - shredded
- 1 teaspoon parsley - chopped
Bake in preheated oven at 425 degrees for 10 minutes or until crust is golden brown. Garnish with chopped parsley, slice and serve.
To prepare sauteed leeks, melt a small amount of butter in a skillet or saute pan. Add sliced leeks and saute until tender. Season with salt and fresh ground black pepper. A variety of sauces can be used in place of pizza sauce in this recipe. Try using barbecue sauce, teriyaki sauce or hoisin sauce and a selection of different toppings.
