Freedom Scramble
(3 servings) Printable Version
- 4 potatoes thinly sliced
- 1/2 cup onion - chopped
- 1/2 cup green pepper - chopped
- 1/2 cup mushrooms - sliced
- 2 large eggs
- 2 slices American cheese
Beat eggs and mix with potatoes and browned. Place American cheese over entire scramble and let cheese melt. Serve while hot.
Go USA! It's the American cheese from which this recipe gets it's name.

To those who are dissing American Cheese - know what American cheese is: when it's home in its jammies... a mild Cheddar. You folks must be confusing American cheese with Velveeta, Cheese food, or process cheese. True American cheese is quite nice. Meanwhile this recipe is pretty good - but, it screams for some meat. Ham, bacon, sausage, souse, etc.

Icky. American cheese is not a food, it's plastic. The recipe works pretty well with other American-made cheeses (it's lovely with Wisconsin cheddar or California Jack) but American slices... ew. I'll be waiting for Homeland Security to take me away.

I must be unpatriotic - I couldn't bring myself to use the American cheese so I used Cheddar instead. Please write me in Guantanamo.
