Apple Pancakes

- 6 large eggs
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/2 teaspoon salt
- 1 and 1/2 cups milk
- 1/2 teaspoon cinnamon

1 teaspoon vanilla
- For The Topping:
- 4 medium apples - peeled and sliced
- 1/4 cup brown sugar
- 1/3 cup margarine
- 1/4 cup raisins
Pour apples, raisins, and brown sugar into hot margarine, stir until apples are coated and brown sugar is melted.
Return to oven until butter is hot again, add batter. Bake for 20 minutes at 425 degrees.
Cut "pan-cake" into serving pieces. Serves 6 to 8 people.
A big apple raisin oven pancake that's cut into squares or wedges to serve. A real brunch favorite in our family.

Thumbs up! People making it should be advised that it's not a regular apple pancake or even a puffed one. But there's something cool about this recipe. We'll make it again.
