Blueberry Almond Baked French Toast
(8 servings) Printable Version
- 1 whole-wheat baguette (about 18 inches long) - cut into 1-inch cubes
- 8 large eggs
- 8 large egg whites
- 2 cups lowfat milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/3 cup pure maple syrup
- 2 cups fresh blueberries
- 1/3 cup sliced almonds
- 2 Tablespoons dark brown sugar
Place the bread in a single layer in the baking pan.
In a large bowl, whisk the eggs and egg whites with the milk, vanilla, cinnamon and maple syrup. Pour this mixture over the bread in the pan. Scatter the blueberries evenly over the top and sprinkle with the almonds and brown sugar. Cover with plastic wrap and refrigerate overnight (at least 4 hours).

Bake for 40 to 50 minutes in an oven preheated to 350 degrees.

I knew this recipe sounded familiar. This is originally Ellie Krieger's Blueberry Almond French Toast Bake. Whoever Posted This Recipe Should Be Ashamed Of Copying Someone Else's Recipe And Calling It Your Own.

I loved this!! I used a whole wheat yoga bread that has cranberries and seeds and nuts in it, but otherwise I followed it exactly, and my kids LOVED it. We didn't even put extra syrup on it. This will definitely be a new staple for us.

I liked everything except for the whole wheat bread. You just can get rid of the healthy whole wheat taste. Next time, I'll try white bread. It was still delicious.
