Preheat oven to 400 degrees. Coat 3-quart dish or baking pan with cooking spray. In mixing bowl, combine all ingredients. Transfer to baking dish. Sprinkle top with additional almonds. Bake uncovered for 45 minutes. Serve hot.
You can make a variation on this recipe by not using the almond flavoring and cherries. Try adding a tablespoon of cinnamon, a half-cup of raisins, and a half cup of coarsely chopped peanuts. You'll love it either way. Have a great breakfast!

I have four boys, and they all love this! I make it at least once a week now. I leave out the sugar in the recipe and we just add butter and sugar to taste when I serve it. My husband inhales this! IT'S WONDERFUL!!

This is phenomenal! I made it this morning for the first time. The house smells like yummy oatmeal cookies, and the rich, creamy oatmeal is such a delightful change from apples and cinnamon! BTW, didn't taste the apple at all (but this Mom is happy that it's in there!). Next time I will just make a half batch as it was more than enough for our 2 6yo daughters and me for breakfast.
