Easy Strawberry Breakfast Crepes

  • 8 low-fat flour tortillas
  • 1 10-ounce package of frozen sliced strawberries in syrup
  • 2 cups no-fat cottage cheese
  • 1 cup fresh strawberries - sliced
  • 1 cup chopped peach pieces - fresh or frozen
  • 1 peeled and sliced kiwi - for garnish
  • 4 whole strawberries sliced - for garnish
Thaw frozen strawberries and pulse in a blender or food processor until smooth.

Place each tortilla on a flat surface. Spread about 1/4 cup of cottage cheese down the center third of the tortilla. Place 2 Tablespoons of sliced strawberries over that followed by a Tablespoon of the pureed strawberry sauce.

Roll the uncovered sides of the tortilla over the fillings. Place two "crepes" on each serving plate with the seam-sides down. Top with additional pureed strawberry and garnish with kiwi and strawberry slices.


This recipe uses a tortilla in place of a traditional crepe - super easy and fun for kids. Use low-fat tortillas and no-fat cottage cheese and it's pretty healthy too.

This is a fun idea, but I think it sounds like it would be really good with actual crepes instead of the tortillas. At our closest grocery store, they sell a pack of ready-made crepes right near the tortillas. They're very convenient.
