Enchilada Omelet with Sausage

  • link sausage
  • cream cheese
  • corn tortilla
  • eggs
  • milk
  • green chili
  • salt & pepper
Put link sausage in skillet, add water to about 3/4 of the sausage. Steam corn tortillas for 30 seconds over the sausage to make them easy to roll up.

Remove the tortillas from the skillet. Spread cream cheese on corn tortillas, and set aside. When the sausage is cooked, remove from heat and place inside of tortilla. Roll tortilla and slice into bite size bits.

Beat eggs (or whites), and add milk and green chilies and put in skillet. Set bites of in omelet, and cover until firm. Serve with salsa and avocado.


I have a really large family to cook for, and this went together in less than 10 minutes. I cook everything in an electric skillet. This is pretty mild, I like it a little more spicy, so I add jalapenos to mine after it's cooked. My kids like theirs with a little cheddar on top.

I loved it. I had to guess at the amount of ingredients (would be nice if they were listed exactly), but it turned out great.
