Easy Banana Bread

(6 servings)    Printable Version
  • 1 and 1/4 cups all-purpose flour
  • 2 large eggs
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 3 medium bananas
  • 8 Tablespoons butter or margarine
  • 1/3 cup chopped walnuts (optional)
Cream sugar and butter, mash the bananas and add to the mixture.

Beat and add the eggs. Slowly add the flour, salt, and baking soda. (If desired, fold in the walnuts at this point.) Pour into a loaf pan.

Bake at 350 degrees F for 40 to 50 minutes.

Cooking Notes:

This recipe makes one 9 1/2 X 5-inch loaf or three 6 X 3 1/2-inch mini loaves.

Amazing. I never made Banana bread before. Made per directions without nuts. Turned out very moist. Making again for my neighbor this morning. Took her some yesterday. She loved it. Printing recipe for both of us. This recipe is a keeper.

I made this with my 3 year old students today and it turned out amazing! No nuts in our bread though. The kiddos loved it and so did my fellow teachers who got to have a taste. Even printed out the recipe and sent it home with my kiddos.

Instead of putting foil on top, I put a pan of water under the banana bread and it never burns or cracks on top! I also do that with meatloaf and it works. This recipe is awesome and we all love it!

I am constantly trying to find a banana bread recipe. So many failed recipes. Doesn't rise, raw in the middle or dense and bland. I decided to try one more time... when I came across your recipe. I doubled it, as I had 6 bananas in the freezer to use. I also used my food processor. I have to tell you... ITS THE ONE!!!! It made two perfect loaves. Thank you so much, I finally found a keeper!
