Their omelettes are good and you can make your own from a decent list of ingredients. Their Mexican breakfasts are pretty good too. They have a good selection of pancakes too, but I think they do better with egg dishes.

Taos is sadly lacking in restaurants, or I should say "good" restaurants. But one little gem that we found for breakfast especially, is Michael's Kitchen. Their Green Chili and Cheese Omlettes are like no other. In fact, their Green Chili Sauce is fantastic. They also have an awesome bakery there that looked delicious. Obviously the locals know about this place because it fills up fast and early in the mornings (the only place that has a line in the morning!). Good coffee and staff is pleasant.
