Microwave Maple Fruit Compote
(4 servings) Printable Version
- 2 medium apples -- cored and sliced into 1/2 inch pieces
- 1 medium pear -- cored and sliced into 1/2 inch pieces
- 1/4 cup apple juice
- 2 Tablespoons maple syrup
- 3/4 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
- 1/8 teaspoon nutmeg
Cover dish and cook on high for 4 to 5 minutes or until the fruit is tender. Stir once at the midway point. Let the dish cool to about room temperature on the counter and then chill in the refidgerator for at least 2 hours. Serve cold.

I served this (warm) with the sweet potato pancake recipe on the site last Sunday. Ridiculously tasty!
