Maple Oatmeal Muffins

- 1 cup all-purpose flour
- 3/4 cup rolled oats (not the quick-cooking kind)
- 1/4 cup maple syrup
- 1 large egg
- 1 6-ounce container vanilla yogurt
- 1/4 cup butter
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup raisins
How To Make Maple Oatmeal Muffins
Boil 1 cup of water. In a glass mixing bowl, pour boiling water over the oats. Stir in the butter and let stand until room temperature.
Preheat oven to 375 degrees. Prepare 12 muffin cups with paper, butter or grease (I use Crisco).
In a medium mixing bowl, sift together the flour, baking powder and salt.
In a separate bowl, beat egg with maple syrup and yogurt.
Combine all 3 mixtures, stirring just enough to combine. Fold in the raisins.
Spoon into prepared muffin cups - filling each cup a little over the half-full mark.
Bake for 25 to 30 minutes.
Let cool.
Optional Brown Sugar Chopped Nut Topping:
In a small bowl, use a fork to mix together 1/4 cup chopped pecans or walnuts, 3 Tablespoons brown sugar, 1 Tablespoon wheat germ, 1/2 teaspoon cinnamon and 2 Tablespoons melted butter. Sprinkle over muffins before baking.

These are best served warm. I make a whole bunch and then put one in the microwave for 30 seconds whenever I want to make a quick treat.

I don't know what happened. I didn't miss any of the ingredients but I found these to be very bland.
