Carrot Smoothie

- 1 cup frozen vanilla yogurt
- 1/2 cup finely grated carrots
- 1/2 cup cold carrot juice
- 1/2 cup soft silken tofu
- 2 Tablespoons orange juice concentrate
- 1 Tablespoon lemon juice
- 1/4 teaspoon ginger
- 1 pinch salt
Carrots are loaded with Vitamin A which is essential for healthy skin, hair, eyes and bones.

You can't taste the carrot juice at all. I didn't have any ginger so I skipped that. Overall, pretty good.

It's good with fresh grated carrots too! A bit thicker though.

Mmmm this was good. I didn't use frozen yogurt though, I just used regular, fat-free yogurt from the fridge. But it still turned out delicious! I've already made it 3 - 4 times!

Or, try for a more healthy dessert and mix about 1/2 cup organic milk, about 1 cup organic vanilla ice cream, and about 1/2-1 cup carrot juice (the fresher, the better!. Plenty of good vitamins for health and good eye sight, not to mention calcium and protein!).
You can also add some pieces of candied or grated fresh ginger!!
