Rosemary & Ham Scones
(4 servings) Printable Version
- 1 box Jiffy or similar biscuit mix
- 3 Tablespoons rosemary - finely chopped
- 1/2 cup cream
- a couple pinches salt
- 3 pieces deli-sliced glazed smoked ham (about 1/8 pound)
- 1 Tablespoon orange zest
- 2 teaspoons sugar
Chop the ham slices into small pieces.
Mix together the ham, biscuit mix, rosemary, cream, salt and orange zest.
Pile mixture into 4 large mounds or 8 small mounds onto a nonstick cookie sheet. Sprinkle with a little sugar.
Bake scones for 10 to 12 minutes for large scones, 7 to 8 minutes for small scones.
Savory scones with smoked ham and rosemary. Use good quality ham from the deli. Avoid any ham slices sold near the bologna lunch meats section.

She is referring to a small box of biscuit mix,about 5 1/2 to 6 oz pkg. or one of the Bisquick mixes in the pouch. (Makes 6-8 biscuits) When I make these I add 1/2 cup of shredded cheddar cheese and instead of rosemary I use 1 tsp of oregano, 1 tsp of basil and 1 tsp of parsley and black pepper to taste. They are really good!!

This is a Rachael Ray recipe. I wonder how big a "box of biscuit mix" is?? I'm using Bisquick and have no idea.
