Farmer's Omelette
(1 serving) Printable Version
- 3 large eggs
- a touch of heavy cream
- sausage - either pork or turkey
- onions
- bell pepper
- diced tomato
- salt and pepper - to taste
- cheese of choice (I like Cheddar or Jack)
Beat 3 eggs adding the heavy cream and heat your skillet. I use a non stick 10-inches. Beat those eggs hard and put some air in them and your omelette will be nice and fluffy. When sausage is cooked and veggies are soft, mix them together and spread over egg mixture in skillet. Put a cover on the omelette and watch it does not burn. When top is dry put on cheese and fold onto a platter with your favorite side dishes. Enjoy.
This omelette, which is a must on any American breakfast diner menu, is actually easy to make at home. Onion, bell pepper and tomatoes make it taste fresh. Sausage and cheese make it satisfying and filling.

One of my favorites with a fruit bowl, tea and cooked potatoes.

Curiously, I just finished making almost the same omelette a few hours ago - sans the cheese and two egg yolks. It was delicious!

Yummy. And easy. Turkey sausage and cheddar cheese, and we skipped the tomatoes.
