Low Carb Spinach Scramble
(1 serving) Printable Version
- 1 cup cooked and drained spinach (fresh or frozen)
- salt and pepper - to taste
- 1 Tablespoon chopped onion
- 1 Tablespoon chopped red pepper
- 2 eggs - beaten with 1/4 teaspoon salt
In medium skillet coated lightly with cooking spray - set to medium heat - saute the onion and red pepper until tender.
Add the eggs and scramble until completely set.
To serve, make a bed of spinach on a serving plate. Top with the scrambled eggs. Add additional seasoning if desired.
This is a pretty easy recipe. It's filling and has only 5 grams of carbs. I hope you like it.

You can also saute the spinach with the onion and pepper and add the beaten egg right in the pan and scramble everything together. I make that all the time and love it.

This was very yummy, though I used green pepper instead of red pepper. I'm sure it would taste great with both, however. Also, I scrambled the spinach in with the eggs, pepper, and onion.
