Breakfast Fruit Parfait
(4 servings) Printable Version
- 1 cup granola
- 1 8-ounce container strawberry or peach yogurt
- 6 to 8 large strawberries - hulled and sliced
- 1 banana - sliced
- 1 cup seedless grapes
- 1 peach or nectarine - sliced
- 1/2 cup fresh blueberries (optional)
- 1/4 cup finely chopped almonds or walnuts (optional)
The next morning, toss together prepared fruit. Layer, alternating the fruit and yogurt mixture, in tall, pretty glasses, to make a parfait.
Top with a dollop of the yogurt and sprinkle with nuts. OR - for a quick breakfast, toss the fruit with the yogurt the night before. Can be eaten on the run.
A really great way to start the day. You get grains from granola, calcium from yogurt and more good things than I can count from the fruits. Chopped nuts are optional but highly recommended.
