Healthy Chicken Hash

- 2 lbs. red skinned potatoes-peeled and cut into 1-inch cubes
- 4 Tbsp. olive oil
- 1 medium onion-chopped finely
- 1 red pepper-diced
- 1 yellow pepper-diced
- 1 tsp. fresh thyme
- 3 cloves garlic-minced
- salt and pepper to taste
- 2 cups cooked chicken-shredded
- 1 cup fresh spinach-washed thoroughly
Heat 2 Tbsp. olive oil in a medium skillet over medium-high heat. Add onion and cook, stirring until onion is softened. Add potatoes and cook until browned on all sides and cooked through, about 10 minutes.
In a separate large skillet, heat 2 Tbsp. olive oil over medium-low heat. Add peppers, thyme and garlic. Cook until soft, about 7-10 minutes. Season with salt and pepper to taste. Add cooked chicken, then spinach and cook just until spinach wilts. Stir in potato mixture until well combined.
Serve with eggs over-easy for a delicious and healthy breakfast!
