Quick Turkey Sausage & Rice Breakfast Skillet
(6 servings) Printable Version
- 2 bags of instant brown rice (or 3 cups cooked rice)
- 1 pound bulk turkey sausage
- 1 (10 ounce) can of tomatoes with green chiles (undrained)
- 1 Tablespoon chili powder
- 1 1/2 cups shredded Monterey jack cheese
Crumble sausage into a large skillet and cook until browned. Drain fat and add onion, cooking until tender. Stir in tomatoes, chili powder and rice. Simmer 2 minutes until heated through.
Sprinkle with cheese and serve.
Garnish with chopped cilantro and sour cream if desired!
