Low-Carb Crepe-Style Pancakes

- 10 grams soy protein
- 1 egg white
- 1/4 teaspoon guar gum
- liquid sweetener - to your liking
- dash of cinnamon (optional)
- dash of salt
- 50ml light soy milk
Coat small pan with non cooking spray; drop batter into pan and fry on both sides.
Thin, crepe-like pancakes that you can fill or top with your favorite low-carb or carb-free syrup or jam.
