Gluten-Free Buttermilk Waffles

- 1 cup rice flour
- 1/2 cup potato starch or corn starch
- 1/4 cup tapioca flour
- 2 teaspoons baking powder
- 1 teaspoon sugar
- 1 teaspoon salt
- 2 eggs or or 1/3 cup egg substitute
- 1 and 1/2 cups buttermilk
- 1/4 cup canola oil
- 1/2 teaspoon vanilla
In a large bowl, mix together the flours, starch, baking powder, salt and sugar.
In a separate medium bowl, beat the eggs. Add the buttermilk, oil and vanilla and mix well.
Add the wet ingredients to the dry ingredients and mix until well-combined and moistened.
Cook according to waffle maker's directions. This recipe makes about 5 medium-sized waffles.
Serve immediately with your favorite topping.
These taste very similar to regular-flour waffles. Some people even like them better. It reminds me of the time I could eat whatever I wanted.

I really like this recipe. There is no substitute for the flavor of buttermilk in waffles. The only changes I made were to separate the eggs and whip the whites to fold in. A touch of fresh ground nutmeg adds a flavor boost.
