Blueberry Flaxseed Pancakes

- 1 and 1/2 cups pancake mix
- 1/2 cup flax seed meal
- 1 cup low-fat milk
- 2 medium eggs or equivalent egg substitute
- 1 cup fresh or thawed frozen blueberries
- 1/8 teaspoon vanilla
In a separate smaller bowl, beat the eggs with the milk and vanilla.
Add the wet ingredients to the dry ingredients and stir together until just combined and moistened. Fold in the blueberries.
Place a large skillet over medium-high heat and coat lightly with cooking spray.
Dollop the batter in 1/4 or 1/3 cup amounts per pancake. Cook until bubbles appear on the top and the edges of the pancakes starts to look dry. Flip and cook the other side until golden brown.
Serve immediately with butter spread and syrup.
This is a very easy way to take regular pancake mix and turn it into healthier and tastier pancakes. I hope you like it. Serve with warm maple syrup for best results.

You can MAKE YOUR OWN PANCAKE MIX by mixing together 2 cups flour, 1/2 teaspoon baking powder 2 teaspoons sugar and a pinch of salt. If you use that, these pancakes are great!

I would like to see a version of this from scratch. I have a pancake mix, but the directions on the box differ from directions here so I'm hesitant to use it. Is there a similar recipe here that doesn't use a mix?

Looking for a similar recipe, but one that's completely from scratch. I could use this if I knew to replace the pancake mix with a certain amount of flour, baking powder, etc. Any suggestions?

I like the idea of flax seed. Also, to keep with the healthy theme, I would use whole wheat pancake mix. I use it all of the time and it's delicious. Sometimes I'll add a scoop of vanilla protein power (Isopure-zero carb.) IT's a great way to sneak in protein - just add blue berries or strawberries and it's a well rounded meal. I also don't eat dairy -- so the milk and butter are soy based (vanilla soy milk adds to the flavor) and egg substitutes.
