Banana Oatmeal Bake

  • 3 bananas (2 sliced and 1 mashed)
  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • 1/4 teaspoon kosher salt
  • 1/4 cup brown sugar
  • 1 egg - beaten
  • 1 and 1/2 cups skim milk
  • 1 teaspoon vanilla
  • 2 Tablespoons brown sugar (optional for topping)
Line an 8-inch pan or glass baking dish (square or round) with parchment paper (for easy removal and cutting!)

Slice 2 bananas. Arrange them in the bottom of the pan. Combine the dry ingredients: oats, baking powder, salt and brown sugar. In a separate bowl, mash 1 banana and combine with the rest of the wet ingredients: egg, milk, vanilla.

Pour the wet ingredients into the dry. Mix well. Pour batter into pan. Bake in a 375 degree oven for about 25 minutes. Sprinkle with remaining brown sugar and bake for another 4 to 5 minutes. Let cool for 5 minutes before serving.


This is a baked oatmeal with a lot of sweet banana flavor. It takes about 5 minutes to prepare and about 30 minutes to cook.

Comes out like bread. It has good flavor and is generally quite good, but I was expecting more of an oatmeal with a crust - wish it was more moist and mushy in the middle.

It was more like a coffee cake than like oatmeal. Even though it wasn't was I was expecting, we all liked it. It had lots of flavor. I'd give it a B+.

Wow! This is really an explosion of banana flavor. Also, it's low in sodium, fat and dose not have much added sugar either. A healthy food that actually tastes good! Will definitely be making this again!

Made this for my holiday breakfast party. I can't say it was a hit with everyone, because some prefer fatty sausage or sugary cinnamon rolls. But it was easy to make, tasted great, and was a good counterbalance for all the less healthy dishes I served.

Bravo "mrbreakfast_lvr" - This was a great dish. It should be called Deluxe Banana Bread Coffeecake Bake. It you like bananas, this is bursting with flavor... and what a great way to get healthy oats into your day. The brown sugar topping was a terrific final touch.
