Coconut Toast
(6 servings) Printable Version
- 1 cup flaked coconut
- 1 cup sugar
- 1/2 cup melted butter
- 1 egg beaten
- 1 teaspoon vanilla
- 12 slices of white bread
Spread over each slice of bread.
Place on ungreased baking sheet.
Bake at 350 F for 15 to 20 minutes or until lightly browned.
So simple, but so good. The flaked coconut gets toasted on pieces of toast. This is great on it's own or treated like French toast with a drizzle of maple syrup.

So happy to find this recipe, it is just like the Coconut Toast my Mom used to buy at the local bakery and bring home to us kids back in the 1950's!

My Grandmother made coconut toast this way: Eagle brand milk, bread and coconut. The condensed milk took the place of the egg & sugar mixture.
