Hawaiian Omelette
(3 servings) Printable Version
- 6 large eggs
- 1/2 cup small pineapple chunks
- 1/2 cup cubed ham
- 1/2 cup Monterey Jack cheese
- 1/2 cup Cheddar cheese
- 6 Tablespoons water
- salt and pepper - to taste
Thinly coat your skillet with vegetable oil spray. Heat over medium high.
Pour egg mixture into pan. When eggs are almost set, sprinkle half of the omelette with remaining ingredients.
Fold other half of omelette over filling. Continue cooking until cheese melts, about 2 minutes.
Cut omelette into 3 wedges and serve.
Aloha Kakahiaka!! An omelette with pineapple, ham and two cheese. Like a Hawaiian pizza, but it's for breakfast.

Just make sure you drain the pineapple pieces very good - like press them between paper towels - or else there's too much liquid and a little seeps out of the finished omelet. Other than that, good taste... good breakfast.

Had this at a local diner... they changed out the Monterey Jack cheese with chunks of cream cheese. I have been fantasizing about it every since!

We tweeked it just a bit and used only Pepper Jack cheese (2/3 cup)so it'd be a little spicy. Delicious! One step I'd add above is to completely drain the pineapple pieces. Nobody wants a watery omelet. Pretty cool recipe overall.
