Cranberry-Nut Coffee Cake
(8 servings) Printable Version
- 1 and 1/4 cup biscuit mix
- 2 Tablespoons sugar
- 1/2 teaspoon cinnamon
- 1/3 cup milk
- melted butter - about 2 Tablespoons
- 1/2 cup drained canned cranberry sauce
- 1/3 cup canned chopped almonds
Roll into 9-inch square on floured board; brush with melted butter. Spread with cranberry sauce and chopped almonds.
Roll, jelly-roll style; seal edges; form into coil.
Place on greased baking sheet. Bake in hot oven (400 degrees) 20 minutes or until brown.
Frost with sugar glaze; garnish with cranberries and almonds.
6-8 servings.
This vintage recipe is from a 1955 ad from the American Can Company. According to the ad, "Better breakfasts begin with food from Canco cans... try this Berkshire Breakfast and see! If it comes in a Canco can - it comes to you at its best!"

I made a vanilla glaze with a cup and a half powder sugar, 2 or 3 Tablespoons milk and a teaspoon vanilla extract. I drizzled that all over the cooled coffee cake. It was amazing!
