Applesauce Oatmeal Muffins

- 1 and 1/2 cup all-purpose flour
- 1 and 1/4 cup rolled oats - preferably quick-cooking
- 1 and 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 teaspoon salt
- 1 large egg
- 3/4 cup applesauce
- 1/2 cup milk
- 1/2 cup packed brown sugar
- 1/4 cup vegetable or canola oil
- 1 teaspoon vanilla extract
- 1/2 cup grated or finely chopped apple
How To Make Applesauce Oatmeal Muffins
Preheat oven to 400 degrees. Prepare muffin tin with papers or by coating cups with cooking spray.
In a large bowl, mix together the flour, oats, baking powder, baking soda, cinnamon, nutmeg and salt.
In a separate bowl, beat the egg. Stir in the applesauce, milk, brown sugar, oil and vanilla.
Add the wet mixture to the dry mixture and mix just until everything is moistened (no pockets of dry flour remaining).
Fill each muffin cup 3/4 full. Bake for 15 to 18 minutes until a toothpick inserted into the middle of a muffin comes out dry (no batter sticking to it).
Allow muffins to cool 15 minutes before serving.
Optional Crumble Topping
In a small bowl using a fork, mix together 1/3 cup quick-cooking oats, 1 Tablespoons brown sugar, 1/4 teaspoon cinnamon and 1 Tablespoon melted butter. Sprinkle over muffins before baking. If desired, you could also mix in 1/4 cup of chopped pecans or other chopped nut.
Cooking Notes From Mr Breakfast
The muffins shown here took exactly 17 minutes to bake. To make mini-muffins using the same batter, the cooking time is 11 minutes.
For muffins that are a little more moist, consider replacing the 1/2 cup milk with 6 ounces of plain or vanilla yogurt.
During our recipe test, 1 small apple yielded 1/2 cup grated apple.
Remember the Brady Bunch where Peter Brady kept saying "Poke Chops and Apple Shause!". That wasn't as funny as a lot of people made it out to be. This recipe uses applesauce for sweetness and flavor.

I added more cinnamon, used 1/2 cup whole wheat flour with 1/2 cup white and added 1/4 cup ground flaxseed meal and raisins (add a bit more applesauce to give mositure). The kids liked it.

Hi Katao - I agree. That's a lot of powder. I'd drop that amount to 1 teaspoon. I'll try to get in touch with the submitter and see if they made a misprint. If anyone tries this recipe with the reduced powder, let me know how it goes. Thanks!
