Garden Scramble
(2 servings) Printable Version
- 1 cup egg substitute
- 1/8 teaspoon ground pepper
- 1/8 teaspoon marjoram leaves
- 1/4 cup celery - finely chopped
- 1/4 cup red bell pepper - finely chopped
- 2 Tablespoons green pepper - finely chopped
- 1 Tablespoon fat free chicken broth
- 1 cup nonfat Cheddar cheese - shredded
- 2 slices white or wheat bread - toasted
- 1 Tablespoon chives - chopped
In a nonstick skillet - sprayed with cooking spray over medium heat, cook celery, red pepper, green pepper and chives in chicken broth until tender. Add egg substitute and grated cheese to mixture.
Cook - stirring occasionally until set. Garnish with additional chopped chives. Serve immediately with toast or just on its own.
A combination of red bell pepper, green bell pepper and chopped celery give this scramble a fresh-from-the-garden flavor.

Cooking the vegetables in chicken stock gives them a great flavor. Great tip!
