Upside-Down Spinach Pie
(4 servings) Printable Version
- 1 10-ounce package frozen chopped spinach - thawed and well drained
- 1/2 cup shredded low sodium Swiss cheese (about 2 ounces)
- 1/4 cup onion - chopped
- 1/2 cup Cream Of Rice Cereal - uncooked
- 1 and 1/2 teaspoons baking powder
- 1 and 1/2 cups fat free milk
- 3/4 cup cholesterol-free egg product
- 2 Tablespoons margarine or butter - melted
Blend cereal and baking powder in medium bowl; stir in milk, egg product and margarine. Pour over spinach mixture.
Bake at 400 degrees F for 30 minutes or until puffed and golden. Cut into wedges to serve; garnish as desired.
