Eggs Ole

- 9 large eggs
- 1/2 cup milk
- 1 pinch salt
- 1 8-ounce package grated Cheddar cheese
- 1 16-ounce can diced tomatoes
- 1 small can chopped jalapeno peppers - drained
- 1 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon cumin
- 1/2 teaspoon chili powder
Beat the eggs with the milk and salt. Pour into a greased 9 x 13 baking dish. Bake at 325 degrees for 20 minutes or until firm. Sprinkle with cheese and bake for 5 more minutes.
Serve the warm salsa sauce over the egg casserole. Garnish with black olives and avocados, if desired.
