Banana Biscuits
(12 servings) Printable Version
- 2 cups all-purpose flour
- 1 Tablespoon sugar
- 2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 3/4 teaspoon salt
- 1/4 cup butter or margarine - cold
- 3/4 cup soy milk - cold
- 1/2 cup mashed banana
Make a well in the center.
Pour soy milk and banana into the well.
Stir to moisten.
Drop by spoonfuls onto greased cookie sheet.
Bake at 400 degrees for 15-20 minutes.
Note From Mr Breakfast:
One breakfast lover wrote in regarding this recipe saying it could "use some cinnamon, vanilla, or nutmeg." We suggest a 1/2 teaspoon of vanilla AND 1 teaspoon cinnamon.
Serve 'em hot with butter or your favorite "not butter" substitute, marmalade, or peanut butter.

Tripled recipe, made with 2% milk (added tablespoon Canola oil), cut amount sugar ratio in half. Made 16 large biscuits - cooked 15 min. at 400 deg. and 10 min at 350 deg. I enjoyed the recipe... more like a "bread" rather than a dessert. - Chuck
