Hash Browns and Garlic Mushrooms
(5 servings) Printable Version
- 4 medium-sized potatoes
- 5 large mushrooms
- 1 onion
- 1 egg
- about 2 tablespoons olive oil
- salt and pepper to taste
- 1 clove garlic
Dice onion finely. Crack egg and whisk a little.
Combine potato, onion and egg and squeeze into small patties.
Fry in olive oil.
Quarter mushrooms. Finely dice garlic and combine in same pan with a healthy dose of olive oil.
Cook all until mushrooms are soft and hashbrowns are golden brown.
Add salt and pepper to taste.
This fancy side-dish feels like a meal in itself! My wife hates that I love garlic for breakfast!

They taste good. I had to mix in some flour with the patties because they wouldn't hold together very well. ^_^
