American Toast Fruit Cobbler
(8 servings) Printable Version
- 8 to 12 ounce long bread
- 4 large eggs
- 1 cup milk
- 1/4 teaspoon baking powder
- 1 teaspoon vanilla
- 3 1 pound cans sliced peaches - do not drain
- 1/2 cup brown sugar - packed
- 1 teaspoon cinnamon
- 2 Tablespoons butter - melted
In another oblong dish (12 x 9) spray with no stick spray and place fruit in bottom, sprinkle with brown sugar and cinnamon mixture.
Place bread slices over fruit and brush with melted butter. Bake in a 425 degree oven for 25 minutes.
It's sort of a mix between French toast and a cobbler. It makes a lot and it's packed with peaches.

I made something similar with canned apple pie filling. I did layers where there was soaked bread on the bottom, then the apples and then another layer of soaked bread. I came out great. I recommend it!
