Creamed Eggs On Toast

  • 2 cup white sauce (see below)
  • 6 hard-boiled eggs
  • salt - to taste
  • toast
Hard-boil the eggs. Prepare white sauce (see below). Salt to taste. Chop or slice boiled eggs into white sauce while heating. Mix well and pour over toast. Serve while hot. Approx. 4 servings.


WHITE SAUCE (Sauce Blanche):
3 Tablespoons butter
3 Tablespoons flour
2 cups milk
Salt and pepper to taste

Melt the butter in a saucepan and add the flour, stirring with a wire whisk. Add the milk, stirring rapidly. Cook, stirring, about 5 minutes until thickened and smooth. Season to taste with salt and pepper. Makes 2 cups.


This recipe is for a buttery white sauce with chopped hard-boiled eggs over toast or English muffins. I think it's best with sour dough toast.

Grandmother said this was all they had for breakfast during the depression, minus the eggs. Grew up eating this but we were not that poor so we used biscuits instead of toast. Still love this and the kids think it's a treat.

I quartered the recipe, and added a bit of garlic to the sauce. Pretty good, but wouldn't do that again. I also felt like I was racing against the clock to finish eating it. It cools down extremely quickly. But, a lot better than I expected. Adding paprika on the end product gives a neat flavor and color burst.

Never heard of this or some of your other great recipes until I started reading this: "Living on a Little" published in 1908. Breakfast is my favorite so it's wonderful to find some new ideas.

I am retired Navy and in the early years this was my favorite Navy breakfast. I am told they don't have it in there menu any more. Or Red hash and potatoes or SOS... what a shame.

This was first recipe I ever made in home ec in high school many years ago but we fried bacon very crisp and crumbled it in the white sauce also over biscuits... deeeeeelicious!

Fry some chopped up Spam (might want to omit salt) + shred some chedder cheese + stir that into sauce during last minute of cooking. A real Rib Sticker!
