Banana Bran Pancakes

- 3/4 cup oat bran
- 1/2 cup all-purpose flour
- 1/4 cup whole wheat flour
- 1 Tablespoon baking powder
- 1/2 teaspoon cinnamon
- 1 medium banana - sliced into thin coins
- 1/4 cup egg substitute
- 1 cup low-fat milk
- 1 Tablespoon maple syrup
- 2 teaspoons canola oil
In a large bowl, combine the bran, both flours, baking powder and cinnamon.
In separate medium bowl, beat together the egg substitute, milk syrup and oil.
Add the wet ingredients to the dry ingredients. Mix until just combined. Fold in the bananas.
Prepare a griddle or large frying pan by setting the heat to medium and spraying generously with cooking spray.
Dollop the batter 1/4 portions to make each pancake. Cook until bubbles appear on the top and the edged start to look dry. Flip and cook the other side to a golden brown. (About 2 minutes on the first side and one minute for the second side).
Serve warm with your favorite topping.
These are great with I-Can't-Believe-It's Not-Butter and a drizzle of pure maple syrup. Another good way is fresh banana slices and whipped cream as a topping.

Needed about 3 more Tablespoons milk for the batter to be a good consistency.

It was delicious and the whole family loved them. For decoration, I put banana wheels in the shape of a smiley face and served it on top.

The batter was so thick and the pancakes were really heavy. Did not like them at all.

From Healthy Cookin'
I substituted 2 egg whites for the egg substitute and an extra tsp of oil for the syrup in the batter. I also threw in some dark choc. chips. the kids loved them and I didn't feel guilty eating them. I even did the nutritional without the chips - I made 7 pancakes with this batter, so I used serving size 7.
