Perfect Breakfast Muffins

- 4 large eggs
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 tsp vanilla extract
- 1 medium carrot (peeled and grated)
- 1 large apple (peeled and grated)
- 1/2 cup raisins (golden is best)
- 1/2 cup shredded sweetened coconut
- 1/2 cup oats
- 1 cup flour
- 1/4 cup wheat-germ (if you don't have it just use equal amount of flour)
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1 tsp ginger
- 1/8 tsp nutmeg
- 1/4 tsp cinnamon
- 1/4 tsp salt
Whisk the first four ingredients together with an electric mixer.
Mix the oats, flour, wheat-germ, baking soda, baking powder, ginger, nutmeg, cinnamon and salt. Fold into the wet mixture.
Add and mix in with a spatula the fruit and nuts.
Fill in the muffin tray cups to the top (not over). They will rise nicely. Bake for 25 minutes or until a toothpick comes out clean when inserted.
Delicious and hearty with grated carrot, raisins and shredded coconut. Whole grain oats and wheat germ add a healthy dose of fiber.

For those that keep asking. I follow this recipe as listed x2. I substitute white flour for whole wheat flour, Than I add 2-3 bananas,1-2 cups Frozen blueberry, 1 c frozen raspberries, 1/2 c flax seed or more, 1 c cranberry's instead of raisins, 1/2 - 1 cup zucchini,1/4c pumpkin seed,1/4c sesame seeds, sunflower seeds,crushed pineapple. yes sometimes I add all this and they still turn our great. I have even added canned pumpkin. I have also added sliced almonds. It seems that the more I add the better they are. I should start calling these never the same healthy muffins. Usually I do not add more than 2 seeds at a time but I have added 4 different seeds and they were still good.

The best muffin recipe out there. I added 2 bananas, pumpkin seeds, sunflower seeds 1/4 cup each dried apricots chopped, and blueberries. They were great. I also add zucchini. Add whatever you want they still turn out great.

Great muffins - bake to a nice, big size. I omitted the raisins and substituted wheat flour for the wheat germ. Love the oats, coconut, and nuts for texture. Might try substituting apple butter for half the oil next time.

I added 1/2 a cup of nuts and a banana. I used 1/2 whole wheat and 1/2 regular. They are good, next time I will add zucchini and more carrot.

I didn't have the shredded coconut but I followed the rest of the recipe exactly, just substituting some of the egg and sugar with Egg Beaters and Splenda. They were very delicious.
