Shredded Carrot Breakfast Salad
(2 servings) Printable Version
- 2 medium shredded carrots
- 1/2 small can crushed pineapple with juice
- A handful of raisins
- 1/2 cup of orange juice
- pinch cinnamon
- pinch nutmeg
- Approx. 1 cup old fashioned uncooked oatmeal
This is delicious! Top with sliced banana if desired. You can vary this using different grains (such as cooked rice, bulgur, raw millet). Use your imagination and your taste buds. Experiment!

This had an odd texture and was a little bitter what with the bottled OJ. Maybe it'd be better with freshly juiced oranges. Raw foodists would probably enjoy this; it just wasn't for me...
